• 250g unsalted butter
• 5 eggs
• 5 yolks
• 125g caster sugar
• 250g dark chocolate
• 50g flour (sieved)

• Beat eggs, yolks and sugar until pale
• Melt chocolate and butter over a bain-marie
• Fold chocolate into egg and sugar mixture
• Gently fold in the flour
• Pour into buttered, floured moulds
• Bake at 180°C/ Gas 4 for 10-15 minutes until centres dome.
