Come and take a walk on the wild side and let Sidney share with you the culinary trends from the region of his childhood. Sidney was born and raised in the Orbi Gorge area or, as it is known by the Zulus, Umtamvuna of Zulu Land or Kwa Zulu in South Africa. Raised by his Zulu nanny Edith, who passed on to him her cookery skills and secrets as well as by his well travelled Irish father who was an excellent cook in his own right, both of whom played a major role in him pursuing a career as a chef.

Natal is well known for the culinary influences of the Indians who were brought over by the British to work on the sugar plantations of Natal as is the Cape of Good Hope for its rich Cape Malay table. You will have hands on experience in preparing dishes from Southern Africa and the Indian Ocean, which make up what is now The Rainbow Nation’s contribution to the culinary world, as South Africa now boasts 5 of the top 100 restaurants in the world in the ‘Perlingo’ ratings. This two-day course includes Cape Malaysian, Indian, Asian, African, Dutch and French culinary influences. On your second evening you will experience a South African evening under the stars or around the table, where true friends are made.
